Recipe for Mexican Quesadilla
Quesadilla is a mexican dish which is made up using flour tortillas, but you can totally make them using rotis!
All that you’ll be needing is:
6 homemade rotis (one each for every member in your family!)
1 cup finely grated paneer
1 cup chopped onions
1/2 cup chopped bell peppers
1/2 cup chopped tomatoes
Few chopped green chilies
Refined or olive oil
Salt, pepper and other spices to taste
Method :Heat the oil in a pan and saute the onions, bell peppers, green chillies and tomatoes. Wait for them to get tender and then put the spices according to your taste. Allow the mixture to heat for a minute or two and then put the paneer into it. Again, let the mixture heat for a few minutes and once the mixture is made, just transfer it into a bowl.
Then, take a pan and let it heat. Take one roti and place it on the pan. Spread some butter on it and the pan as well and then spread about two to three tablespoons of the mixture on one half of the roti. Cover that part with the remaining half of the roti so that it takes the shape of a semi-circle.
Flip the quesadilla to the other side as well, to make it crisp. Make sure that neither of the sides turn too brown.
Serve with salsa/tomato sauce!
